SAKE

The quality of Japanese sake can be simply graded from the (milling/polishing) rate of Sake rice during the brewing. Higher rates tend to yield a premium quality and a more refined taste. A cleaner and sharper finish is created on the palate by eliminating fats, proteins and amino acids that result in unwanted Flavours and aromas. The following is in the descending order of Premium Grade Japanese Sake.
JDG – Junmai Dai-Ginjo (Pure Rice Very Special Brew)
Super premium grade sake, which results from over 50% of the Sake rice grain being cut or milled away. This results in a very clean, refined and elegant finish with lively aromatics.
JG – Junmai Ginjo (Pure Rice Special Brew)
Premium grade sake, which results from over 40% of the Sake rice grain being cut or milled away. It is then fermented over low temperature for a longer period than Junmai/Honjozo. Hence resulting in a more complex and delicate flavor in comparison with other types of sake.
J – Junmai (Pure Rice)
No added alcohol with at least 30% of the rice milled away of the Sake rice. Nothing is used in the Sake production except for Rice, Sake Water & Koji Yeast. The taste is usually rich and full of flavor.
G – Ginjo (Distillers Alcohol Added Special Brew)
Premium grade sake, which results from over 40% of the Sake rice grain being cut or milled away. Rather than being pure rice Sake, Ginjo instead has distillers alcohol added during the fermentation process. This results in a more fruity and flowery smell and a light taste.
Y – Yama-oroshi hai-shi (Hard-work Ceased)
Yamahai-oroshi Hai-shi is the process of making sake where the yeast starter is made in a special way that allows for a more funky yeast and bacteria to be present, often leading to a sake that has a wilder gamier flavor that can be fascinating. The name comes from the time it saved the workers in crushing the rice to paste as the bacteria actually breaks it down in half the time

UMESHU        
Umeshu is a Japanese plum wine made from steeping Ume (still unripe and green) in alcohol and sugar. Tateyama Shuzo is made from plums selected from the area of Wakayama (most famous for their high quality of plum in Japan) and Honjozshu Sake. It is a very rich fragrant wine and can be served as an aperitif, on ice, or alternatively it can be mixed with green tea.

So take a dash of Sake and add a bit of a citrus twist with lime liquor, Cointreau and a splash of midori, shake hard over ice and pour into a martini glass with a squeeze of lemon to top it off and you have Tomiko Stations signature cocktail.

KAIDO IMO SHOCHUis a Japanese spirit distilled from Koji rice and sweet potato and the meaning of the name is “Celebrating Red”. It is quite a sweet and fragrant spirit that has a fairly strong impact on the palate.
SHIRONO TAKUMI KOME SHOCHUis a super smooth and clean Shochu made from 100% Japanese rice and is slowly fermented in low temperature and distilled at low pressure then filtered through bamboo charcoal leading to a clean and beautiful fruity Shochu. It can be compared to Tequila and has a rich fragrant palate
MUGO SHOCHU KAKUSHIGURAIs a barley Shochu named Kakushi Gura which means “A Secret Storehouse” and is oak barrel aged lending it an nice oak fragrance and earthy characters and finishing very smoothly. It can be compared to whisky in palate and taste.
